Fluffy Pretzels

Ingredients:

Dough:

  • 2 ¼ teaspoon instant quick rise yeast

  • 1 cup warm water (110°F)

  • 1 teaspoon sugar

  • 2 ½ cups all purpose flour

  • ½ teaspoon sea salt


Topping:

  • ½ cup warm water

  • 1 tablespoon baking soda

  • vegetable oil for greasing the sheet pan

  • coarse sea salt for sprinkling

  • 3 tablespoons unsalted butter melted

Instructions (Tips below!):

  1. Combine the yeast, warm water, and sugar in a bowl and let sit for 10 minutes until foamy. This tells you that the yeast is alive and working.

  2. Add the flour and salt. If you are mixing by hand, add the flour in small portions before kneading. For a stand mixer, mix with the dough hook by hand for a few seconds to roughly combine, then attach the hook and bowl to the mixer and knead on medium low for 5 minutes. The dough should feel soft and smooth, not sticky to the touch.

  3. Cover the dough and let rise for 30 minutes in a warm place.

  4. Once dough has risen, preheat the oven to 450°F and lightly grease a baking sheet with butter or vegetable oil. You can also use parchment paper or a silicone mat.

  5. Place the dough onto a lightly oiled counter top. Divide the dough into 8 evenly sized pieces.

  6. In a bowl big enough to dip your pretzels, whisk to combine the warm water and baking soda and heat in the microwave for 1 minute. It won’t dissolve completely, and that’s okay!

  7. Roll each of the eight pieces into a long rope, and shape each one into a pretzel by making a large loop with one end of the dough and slipping the other end through it. (Original recipe has step-by-step photo instructions if needed).

  8. Dip each pretzel into the wash and place onto the greased baking sheet. Sprinkle with coarse sea salt, then let them rest uncovered for 10 minutes.

  9. Bake for 9 to 10 minutes until the pretzels are golden brown and crisp on the outside. Brush the pretzels with the melted butter right out of the oven. Keep in mind these don’t taste as amazing the next day!

Tips!

Proving your dough: A good place to let your dough rise is the oven: preheat it to the lowest it will go and turn it off once it reaches around 100°F. In the summer, an unheated oven or a sunny spot on the counter will work fine.
